Oils such as olive, and other cooking oils are non drying and can promote mould growth, go rancid, darken the timber and leave a sticky surface, attracting dust and dirt.
Drying oils such as Tung Nut Oil cure on exposure to air, and are more resilient to water, alcohol and detergents. They are less likely to go rancid or promote mould growth.
